Margherita Tortilla Pizza

Ingredients:

1 flour tortilla
1/3 cup halved cherry tomatoes
1/2 cup roughly chopped fresh mozzarella
1 Tablespoon fresh basil, chopped chiffonade style (shredded or finely cut leaf vegetables for garnish)
A handful of fresh spinach
A healthy drizzle of olive oil and balsamic vinegar
Sprinkle of Kosher salt and black pepper

Instructions:

  1. Assort fresh mozzarella and spinach on a flour tortilla. Bake in the toaster oven (or actual oven) until the cheese melts, about 5-10 min.

  2. After baking, add cherry tomatoes and drizzle olive oil and balsamic vinegar over tortilla. Sprinkle with fresh basil, Kosher salt and black pepper.

A little mid-afternoon snack/dinner inspiration right here. This is a 3:30pm favorite of mine. I love tortillas and will eat anything Caprese, therefore combining the two takes me on a magical journey every time I make these.

Margherita Tortilla Pizzas are one of the easiest meals to make and you get sooo much flavor out of them. Pretty much build these how you would when making a pizza and then bake them in the toaster oven (or actual oven) until the cheese melts (5-10 min). Tortillas bake quickly! So keep an eye on them to make sure they don’t burn. I personally like to bake mine with the cheese and spinach and then add the tomatoes, basil, olive oil, and balsamic vinegar afterwards because I love the contrast between the crispy tortillas with warm cheese and the fresh tomatoes and basil.

This combo is super fresh and will satisfy your salty, sweet, and gooey cheesy cravings without hindering your appetite for dinner. Go for one or two as a snack like I did or whip a bunch up as your main dish and serve with a side. I usually don’t add spinach, but I found that my veggie intake for the day was lacking and it was delicious. Spinach has a mild flavor but brings brightness to these classic Margherita Tortilla Pizzas.
