Berry Breakfast Oats

Ingredients:

1/2 cup Quaker Oats Old Fashioned oats 1 cup milk (cow’s or plant-based both work)
1/4 teaspoon maple syrup
1 dash vanilla extract
1 pinch kosher salt (absolutely necessary)
1/8 teaspoon cinnamon
1/4 cup strawberries (fresh or frozen)
1/4 cup blueberries (fresh or frozen)
1-2 Tbsp peanut butter or other nut butter

Optional toppings: more cinnamon, coconut flakes, hemp seeds, cacao nibs, hemp or flax seeds, local honey

Instructions:

  1. Combine oats, milk, maple syrup, vanilla extract, salt, and cinnamon in a small saucepan and simmer on low heat, stirring frequently.

  2. Once oats start to thicken, add 1/4 cup strawberries and 1/4 cup blueberries. Fresh or frozen will work! Frozen fruit will need to be added earlier than fresh fruit. Add fresh fruit with only 1-2 minutes left of cooktime to prevent them from becoming mushy.

  3. After your oats cook to desired consistency, top with your favs to add some more texture. For this recipe, I went with fresh strawberries, peanut butter, and more cinnamon.

Oatmeal in the morning is one of my absolute favorite go-to picks because it tastes SO good and it keeps me full all day. I’m more of a savory breakfast-kind-of-girl, so mixing it up with these oats, which are sweetened with maple syrup and fruit, are an awesome addition to my routine.

If you tend to have a sweet tooth in the morning and lean towards pancakes, french toast, muffins, and waffles, you might actually be surprised with how this breakfast option leaves you feeling throughout the morning— pleasantly full with any and all sugary cravings satisfied. The whole milk, peanut butter, oats, and fruit provide the wholesome fat, carbs, and protein that your body needs and craves before a busy morning. The whole cow’s milk isn’t essential, as you’ll still get a super fulfilling and tasty meal from water or nut/oat milk-cooked oats. I just love the creaminess and flavor that milk adds to this dish!
