Cilantro and Garlic Zesty Seafood Marinade

  • servings: best for about 1 pound of fish or meat

Ingredients:

1/3 cup olive oil
2 cloves garlic, minced (about 2 teaspoons)
¼ cup cilantro, finely chopped
1 Tablespoon lemon juice
1 teaspoon Franks hot sauce
½ teaspoon kosher salt
¼ teaspoon black pepper
1/8 teaspoon cayenne or paprika

Instructions:

  1. Finely mince garlic and chop cilantro. Combine with all other ingredients in a small bowl and whisk until evenly mixed.

  2. Prepare seafood. I usually make this with shrimp, so I devein and remove the shells. If marinating fish or meat, clean and portion evenly.

  3. Pour marinade over seafood or meat and let sit for about 20-30 minutes. Bake or grill for delicious results.

White wine, garlic and lemon sauce over whole wheat pasta with cherry tomatoes, spinach, and green beans, topped with shrimp marinated in garlic and cilantro zesty seafood marinade and grated parmesan.

What’s your go-to hot sauce? Mine is Frank’s and it truly does go on everything. I love adding it to my marinades because it adds delicious savory notes with an acidic punch, as well as as some gorgeous orange tones.

When I’m feeling a little crazy, I’ll double or triple what the recipe calls for and dish up one of my favorites— grilled buffalo shrimp.

This seafood marinade will pair well with a white wine sauce or make for a delicious grilled shrimp appetizer that stands strong on its own!
